On Toxic Citrinin Derived from Monascus: Its Producers, Properties

摘要 红曲产品中可能存在真菌霉素(mycotoxin)--桔霉素(citrinin).根据国内外对给曲桔霉素的最新研究成果,介绍了桔霉素的有关性质,如桔霉素的生产菌种(株)、桔霉素的代谢途径、桔霉素的有关理化性质、如何控制桔霉素的生产。作者认为,桔霉素问题的出现,在我国红曲生产及应用领域来说,即是机遇,又是挑战。我国红曲生产行业对红曲桔霉素的问题应引起足够的重视,对生产菌种及红曲的发酵工艺技术要进行系统 In China, the toxic metabolite potentially existed in Monascus products might be a new concept.With 8 papers published in recent years as references, we have reviewed the research work in Monascus metabolite-citrinin, such as the potential producer strain, the biosynthetic metabolic pathway, the control of its formation in submerged fermentation process. As the citrinin was considered as a kind of mycotoxin, and it was found in Monascus products manufactured by both solid state and submerged fermentation processes, so we have to pay close attention to this problem. It is necessary to investigate the strains used in factories to see if they produce citrinin, then select the citrinin-free strains as producers; and we have to establish the suitable production process to manufacture citrinin-free Monascus products.
