花生红衣多酚的乙醇提取及清除DPPH自由基能力的研究 预览 被引量:5

摘要 花生红衣是花生加工产业的副产物,含有多种多酚物质,如白藜芦醇、原花青素等,是一种天然的抗氧化剂。本文研究了花生红衣多酚的乙醇提取工艺条件及清除DPPH自由基的能力。选择浸提乙醇浓度、提取温度、提取时间、料液比四个因素进行单因素实验,然后通过正交试验进一步优化提取条件。结果表明,乙醇提取花生红衣多酚的最优工艺条件为:乙醇浓度40%,提取温度50℃,提取时间75min,料液比1:40。在此条件下提取的花生红衣多酚含量可达12.37%。清除DPPH自由基能力的实验结果表明,花生红衣多酚对DPPH自由基的清除能力强于同浓度的维生素C和维生素E,但次于TBHQ。本文可为花生红衣多酚的开发利用提供参考。 Peanut skin was a by -product in peanut processing. It contained various polyphenols, such as resveratrol and proanthocyanidins which are natural antioxidants. The extraction technology of peanut skin polyphenols with ethanol and its capability of scavenging DPPH were studied. Ethanol concentration, temperature, extraction time and solid - liquid ratio were chosen as single factor. The extraction conditions were further optimized by the orthogonal test. The results showed that the optimum conditions of extraction were : ethanol concentration 40%, temperature 50 C, extrac- tion time 75rain and solid- liquid ratio 1 : 40. Under the above conditions, peanut skin polyphenol content was 12. 37%. The results of scavenging DPPH capability showed that peanut skin polyphenols was stronger than VC and VE, but inferior to TBHQ solution with the same concentration. This paper provided references for the development and utilization of peanut skin polyphenols.
