Advances on analytical technologies for meat adulteration

摘要 目前肉类掺假问题频繁发生,肉类掺假检验技术的研发已成为热点。文章综述红外分析、色谱分析、免疫分析和DNA分析等技术在肉类掺假检验中的应用,探讨肉类掺假检验技术法发展的趋势。 Meat adulteration events occurred frequently.Test method for meat adulteration in food products has becoming the focus with more attention.In this paper,the application of analytical technologies for meat adulteration,including Infrared spectroscopy,Chromatography,Immunoassay and DNA analysis were reviewed.
