Optimum process conditions for extraction of chlorogenic acid from sweet potato leaves were studied.Single factor method and Box-Behnken experimental design were applied to optimize the extraction process. On this basis,extraction kinetic models were established. The results showed that the optimum technological conditions for the extraction of chlorogenic acid were the follow spects：the volume fraction of ethanol solution was 59 %,pH was 4.8,extraction temperature was 57 ℃,extraction time was 29 min,under this conditions,the yield of insoluble fiber was 3.63 %. The kinetic models were established under different concentration of pH and extraction time,and the 5 degree polynomial model was the best fit.
